Almond Amaretto Cheesecake Recipe

Some facts...Amaretto is a popular Italian sweet liqueur and is made from either apricot or almond pits or both. The flavourful liqueur complements chocolate desserts very well and is often used in tiramisu, cheesecake recipe and even savoury dishes. Ingredients For Crust

1/2 cup 				Toasted Almonds; finely pounded
1/4 cup 				Brown Sugar
1 cup 				All-purpose Flour
1/2 cup				Cold Butter
1 			        	Large Egg Yolk
1/2 tsp 				Almond Essence
1/4 tsp				Salt

Ingredients For Amaretto Filling
250 g Cream Cheese; softened at room temperature 1 1/4 cups Castor Sugar 2 tsp Grated Lemon Zest 5 Large Eggs 1 tbsp Custard Powder 2 Egg Yolks 1/3 cup Heavy Cream 3 tbsp Amaretto Liqueur 8 to 10 Frozen Strawberries; halves for garnish

Method

To prepare Crust:
Using a blender at low speed, mix together ground almonds with brown sugar. Add flour and salt. Pulse and blend. Cut butter into smaller pieces and add into flour mixture. Pulse until mixture resembles coarse crumbs. Add egg yolk and almond essence. Pulse until just blended. With your fingertips, press dough firmly onto base and sides (2" up) of greased 9" springform pan. Chill for 2 hours. Bake in preheated oven at 200°C for 10 minutes or until crust turned golden.

To prepare Filling:
Beat cream cheese and castor sugar until smooth and creamy. Add in grated lemon zest. Beat in egg yolks, one at a time, beating well with each addition. Add heavy cream and Amaretto liqueur. Beat at low speed. Add custard powder and beat until just blended.

Preheat oven to 240°C. Pour cheese filling into cooled almond crust and bake for 10 minutes. Then lower heat to 150°C and bake for another hour. If the top of the cheese cake browns too quickly, cover it loosely with foil. When cake is done, leave in for at least 20 minutes before removing from the oven. Allow to cool thoroughly before placing in refrigerator. Chill at least 5 hours before serving. Garnish generously with strawberries. If you want clean cut slices, dip knife in chilled water first before cutting.
