Homemade Candy Recipes

Almond Pralines



Delicious Almond Pralines are one of the delightful Christmas dessert ideas for homemade candy. These easy Christmas candy desserts are filled with toasted ground almonds and make perfect Christmas candy gifts.

You have to be quick as you prepare this as the brittle will harden easily and you will not be able to mould according to the desired shape. Such pralines are no bake dessert recipes where you cook the praline mixture until it is ready.


Ingredients

1 cup				Toasted Almonds
1/2 cup			Brown Sugar
1 1/4 cups			Castor Sugar
1/2 cup			Manuka Honey
1/3 cup			Cold Water
5 tbsp			Butter
1				Orange; halved

Method

Grind toasted almonds with food processor. Set aside.

Meanwhile, grease a large cookie sheet. To prepare praline, cook together castor sugar, brown sugar, manuka honey and water. Keep stirring until sugar is well dissolved.

Keep cooking, but no stirring this time, until you see some syrup brittle threads forming in cold water. Turn off heat. Stir in butter and ground almonds. Pour sugar mixture onto greased cookie sheet. Using orange halves, push gently from the center of the brittle to the edge until brittle is 1/8 inch thick. Quickly before brittle hardens, mould in desired cups. Allow to cool completely.

Remove from moulds only when you are about to serve.
