Amaretto Peach Cheesecake Recipe



This is an absolutely divine Amaretto Peach Cheesecake recipe included in our selection of amaretto cheesecake recipes which calls for the sweet and intoxicatingly fragrant almond-flavoured Amaretto liqueur.

Peaches are favourite fruits used in baking recipes for cream cheese desserts due to the sweet honeyed flavour and are usually turned into puree before baking.


Ingredients For Crust

1 1/2 cups 	                	Chocolate Marie Biscuit Crumbs
4 tbsp 		         	Melted Butter

Ingredients For Peach Filling
700 g Cream Cheese; softened at room temperature 3 tbsp All-purpose Flour 1/2 cup Fine Sugar 3 Medium Eggs 400 g Peach Halves; canned ones, drained and pureed 1/4 cup Amaretto Liqueur

Method

Mix together biscuit crumbs and melted butter. Press crumbs mixture onto base of 9-inch springform pan and bake at 180°C for 8 to 10 minutes.

Beat cream cheese until smooth. Add in fine sugar and flour. Continue to beat until well blended. Add eggs, one at a time, mixing well with each addition. Add in peach puree and Amaretto liqueur. Blend well.

Pour peach mixture onto prepared crust. Bake at 200°C for 10 minutes. Then lower heat to 120°C and bake for another 50 minutes.

Allow cheesecake to cool before removing from pan. Chill well until set. Decorate with peach slices if desired.
