Amaretto Raspberry Cheesecake Recipe

Ingredients For Crust2 cups Chopped Almonds
1/4 cup Melted Butter
2 tbsp Fine Sugar
Ingredients For Filling
400 g Cream Cheese; softened at room temperature
1/3 cup Castor Sugar
3 Medium Eggs
1 cup Sour Cream
2 tbsp Amaretto Liqueur
1/2 tsp Vanilla Essence
1/2 tsp Almond Essence
Ingredients For Raspberry Sauce
3 cups Frozen Raspberries; unsweetened and thawed
2 tbsp Amaretto Liqueur
Sugar to taste
Method
To prepare crust: Mix chopped almonds and sugar with melted butter until evenly coated. Press mixture into base and sides of baking dish. Bake at 180°C until crust is set. To prepare filling: Beat cream cheese and sugar until light and creamy. Beat in eggs one at a time. Add sour cream, Amaretto liqueur, vanilla and almond essences. Beat until smooth and well blended. Pour mixture into prepared baked crust. Bake at 180°C until the center of the filling is set. Allow to cool before chill. Chill for at least 5 hours. To prepare sauce: Reserve some whole raspberries for decorations. Puree remaining raspberries and press through sieve to remove seeds. Stir in Amaretto liqueur and add sugar to taste. Drizzle cheesecake slices with the sauce when serving. Garnish with reserved berries. _________________________
