Apple Pecan Cheesecake Recipe

Ingredients 1 cup Graham Cracker Crumbs
1 cup Fine Sugar
1 tsp Ground Cinnamon
3 tbsp Butter; melted
3 tbsp Fine Sugar
450 g Cream Cheese; room temperature
2 Large Eggs
1 tsp Vanilla Essence
4 cups Apple Slices; thinly sliced, peeled (about 1 kg)
1 cup Pecans; chopped
Method
Preheat oven to 180°C. Mix well together cracker crumbs, 2 tablespoons of sugar, 1/2 teaspoon of groundcinnamon and melted butter. Press firmly onto bottom and sides of 9-inch pie dish. Bake for 10 minutes. Allow to cool. Chill in fridge. Beat cream cheese together with 1/2 cup of sugar in a large bowl until well blended. Add eggs, one at a time, beating well with each addition. Stir in vanilla essence and pour cheese mixture onto crust. Meanwhile, combine remaining fine sugar and remaining ground cinnamon. Toss in apple slices gently to coat. Spoon coated apple slices evenly over cream cheese filling. Sprinkle with chopped pecans. Bake for an hour or until cheesecake turns golden and has set. Allow cake to cool before removing from pie dish. Chill well before serving.
