Banana Cheesecake Recipe



Make great flavourful banana desserts with this Banana Cheesecake Recipe - a simple cheesecake recipe for cream cheese desserts that is chockful with sweet ripe bananas, infused with rum for the extra punch.


Ingredients For Crust
1 1/3 cups 	                	Ginger Cookie Crumbs 
1/4 cup 	        		Melted Butter

Ingredients For Filling
450 g	        	        	Cream Cheese
1/4 cup 	           		Fine Sugar
2 tsp 		                	Rum
1 cup 		        	Yogurt; unflavoured
6 tbsp 		           	Melted Butter
4 		                	Large Eggs
1 cup 		        	Mashed Bananas

Method

To prepare crust: Mix together cookie crumbs with melted butter. Press mixture firmly onto base and sides of greased 9-inch springform pan. Bake crust mixture in preheated oven at 180°C for 10 minutes. Allow to cool before keeping in fridge.

To prepare filling:Beat cream cheese together with fine sugar and rum. Add eggs, one at a time, beating well with each addition. Add in yogurt and mashed bananas. Blend until mixture is smooth and creamy. Pour banana filling onto chilled crust and bake at 180°C for 50 to 60 minutes or until cheesecake turns golden.

Allow cake to cool in oven with the door open. Chill cake before serving, at least 5 hours.
