Banana Cheesecake Supreme
Best of the banana desserts, the Banana Cheesecake Supreme - this banana cheesecake recipe includes walnuts in its pie crust. Ripe bananas must be mashed thoroughly for banana cream cheese desserts and blend well with cream cheese for a smooth creamy texture. Lime juice is added to add zing to the filling.
Ingredients For Crust 1 1/2 cups Graham Cracker Crumbs
5 tbsp Melted Butter
1 cup Chopped Walnuts; toasted
1/4 cup Fine Sugar
Ingredients For Banana Filling
450 g Cream Cheese; at room temperature
1/4 cup Fine Sugar
2 tsp Lime Juice
4 Large Eggs
1 cup Natural Yogurt
1 cup Bananas; mashed from 4 bananas
Method
To prepare walnut crust: Mix together cracker crumbs with toasted walnuts and sugar. Drizzle over melted butter and mix well. With a spoon, press crumbs mixture firmly onto base and sides of a greased 9-inch springform pan. Bake in preheated oven at 180°C for 10 minutes. Set aside for later use. To prepare banana cheese filling: Beat together cream cheese and fine sugar until smooth and creamy. Add eggs, one at a time, beating well with each addition. Blend in lime juice, followed by yogurt and mashed bananas. Blend well at medium speed until very smooth. Pour banana cheese mixture into prepared crust and bake at 180°C for 40 minutes to an hour or until filling turns golden. Allow cheesecake to cool in the oven, with the door slightly open, until cake is has completely cooled. Chill before serving. _________________________
