Banana Meringue Pie



Banana Meringue Pie is one of the favourite great dessert recipes for pie recipes that you may want to make for dessert tonight!

Use just ripened bananas for banana desserts especially when it comes to baking recipes. The heat from baking will cook the bananas further.


Ingredients For Crust

1 cup			        	All Purpose Flour; sifted
1/4 tsp				Salt
1/4 cup				Ice Water
125 g			        	Cold Butter	

Ingredients for Filling

4 			        	Large Bananas; ripe
1 cup			        	Evaporated Full Cream Milk
4 			        	Eggs; whites and yolks separated
1/3 cup				Brown Sugar
1 tsp			        	Icing Sugar
1 tbsp				Melted Butter
1 tsp			        	Banana Essence

Method

To prepare crust, mix sifted flour with salt. Blend cold butter into flour mixture with a pastry cutter. Add chilled water gradually until mixture becomes doughy enough to roll out. Lightly dust worktop and rolling pin with flour. Roll dough out thinly and line pie dish with pie dough. Bake at 180°C for 20 to 30 minutes or until golden brown.

Peel bananas through a sieve. Beat mashed bananas with yolks and brown sugar until smooth. Add milk, melted butter and lastly banana essence.

Fill pie crust with banana filling and bake until filling turns slightly golden brown. Whisk egg whites with icing sugar until stiff peaks form. Spread meringue over banana filling and bake for about 3 minutes or until peaks turn slightly brown. Allow to cool.

This banana dessert is best served cold.

Crust edges not be too thin
- edges will brown quicker

- brush with egg white/milk

- scald milk first
- to prevent watery custard

To prevent bulging crust
- prick the bottom with fork

To let off trapped steam
- prick crust top with fork
