Low Sugar Banana Pecan Pie



Banana Pecan Pie

Ingredients

1 			        	Ready Made 8-inch Pie Crust
4 			        	Medium Eggs; yolks and whites separated
1/2 tsp				Cream of Tartar
1/2 tsp				Ground Nutmeg
4 sachets		        	Sugar Substitute
1 			        	Banana; sliced
2 packets 		        	Gelatine Powder; unflavoured
2 cups				Skimmed Milk
1 tsp			        	Vanilla Essence
1 tsp			        	Banana Essence
1/4 cup				Pecans; coarsely chopped

Method

First, stir gelatine lightly in 1/2 cup of cold milk. Heat up remaining milk and add gelatine mixture. Stir over low heat until gelatine has dissolved.

Whisk egg yolks before adding into hot mixture. Stir continuously. Once mixture thickens, add sugar substitute. Turn off heat. Add in vanilla and banana essences.

Place sliced bananas onto bottom of pie crust. Pour half of filling over sliced bananas. Sprinkle with chopped pecans over filling. Cover with remaining filling.

Whisk egg whites until frothy. Add 1/2 teaspoon cream of tartar, ground nutmeg and beat well. Spoon over banana filling. Bake at 150°C until filling turns golden.

Chill at least 6 hours before serving.
