Diabetic Desserts - Low Sugar Banana Walnut Bars
The Banana Walnut Bars are nutritious diabetic dessert recipes which are rich with fiber and potassium. These are low sugar desserts which use sugar substitute, so there is little worry if you are on a diet or diabetic. Banana desserts generally go well with walnuts as their unique flavour complement each other well.
Banana-Walnut BarsIngredients 1/2 cup Corn Oil
3 tsp Sugar Substitute
2 Large Eggs; yolks and whites separated
1 cup Mashed Bananas; ripe
1 1/2 cups Whole Grain Wheat Flour
1 tsp Baking Powder
1/2 tsp Salt
1/4 cup Sour Cream; low fat
1 tsp Vanilla Essence
1/2 cup Walnuts; chopped
Method
Whisk egg whites until stiff and frothy. Leave aside first. Beat together corn oil with sugar substitute. Add in egg yolks. Blend well. Add in mashed bananas followed by flour mixture. Add sour cream alternately with corn oil mixture. Mix thoroughly until well blended. Stir in vanilla essence, beaten egg whites and chopped walnuts. Pour into lightly greased square baking pan. Bake at 190°C for about 25 minutes. Allow this banana dessert to cool before cutting into bars.
