Cream Cheese Desserts

Black Forest Mini Cheesecake



Enjoy making these Black Forest Mini Cheesecake with this mini cheesecake recipe. This is the perfect best cheesecake recipe if you are looking at serving small servings of cream cheese desserts in a party or some small gathering w.ith close friends. These cakes are actually muffins and you would need to have a muffin pan ready and lined with paper cups.


Ingredients
24 		                	Vanilla Wafer Cookies
450 g		                	Cream Cheese; softened
1 1/4 cup	                 	Castor Sugar
1/3 cup 	                	Hershey's Cocoa Powder
2 tbsp 		        	All-purpose Flour
3 		                 	Large Eggs
225 g		                	Dairy Sour Cream
1/2 tsp 	                	Almond Essence
		                    	Canned Cherry Pie Filling; chilled

Ingredients for Sour Cream Topping
225 g Dairy Sour Cream 2 tbsp Icing Sugar 1 tsp Vanilla Essence

Method

Heat oven to 160°C. Line muffin cups (2½ inches in diameter), with foil bake cups. Place one vanilla wafer (flat-side down) in bottom of each cup.

In large bowl, beat cream cheese until smooth. Add sugar, cocoa and flour; blend well. Add eggs; beat well. Stir in sour cream and almond essence. Fill each muffin cup almost full with batter. Bake 20 to 25 minutes or until set. Remove from oven; cool 5 to 10 minutes.

Spread heaping teaspoonful sour cream Topping on each cup. Cool completely in pan on wire rack; refrigerate.

Just before serving, garnish with cherry pie filling. Cover; refrigerate leftover cheesecakes. Makes 1 1/2 to 2 dozen cheesecakes.

For Sour Cream Topping:
In small bowl, stir together dairy sour cream, icing sugar and vanilla essence; stir until sugar is dissolved.
