Low Sugar Blueberry Cheese Parfait

Ingredients
30 pcs Chocolate Marie Biscuits; finely crushed
70 g Butter; melted
1 cup Fresh Blueberries
1/2 cup Cream Cheese; low fat
1/2 cup Natural Yogurt; low fat
1/2 cup Blueberry Yogurt; low fat
2 tbsp Manuka Honey
1 tsp Vanilla Essence
1 tbsp Gelatine Powder
5 tbsp Hot Water
1 tbsp Blueberry Jam; low sugar
Method

Mix biscuit crumbs with melted butter and pat firmly onto prepared moulds. Chill first.
Beat cream cheese until smooth and creamy. Add honey, followed by both natural and blueberry yogurt.
Meanwhile, mix gelatine powder into hot water until gelatine has completely dissolved. Pour into cheese mixture and blend just a minute.
Arrange blueberries onto crumbs base. Scoop cream cheese mixture over blueberries. Chill about 15 minutes to allow cheese parfait to set. Now arrange blueberries onto parfait. Spoon melted jam over blueberries. Serve chilled.
To prepare glaze, mix jam with 3 tbsp of water and cook over boiling water until jam has melted.
Serves 6 - 8 depending on your appetite :)
