Blueberry Muffins



I know for sure Blueberry Muffins are a favourite with many dessert lovers as they are undoubtedly one of the best tasting blueberry desserts around as far as homemade desserts go. Frozen blueberries are used in this blueberry dessert recipes

Muffin recipes can sometimes be a bit of a challenge, given the many aspects you will need to keep an eye on. That's why we have created some tips and tricks to keep in mind when baking your favourite muffins.


Ingredients

340 g			        	Plain Flour
1 1/2 tsp				Baking Powder
70 g			        	Castor Sugar
1/4 tsp				Salt
2			        	Medium Eggs; lightly beaten
300 ml				Fresh Milk
90 g			        	Butter; melted
1 tsp			        	Vanilla Essence
180 g			        	Blueberries; frozen

Method

Sift plain flour with baking powder. Stir in castor sugar.

Meanwhile, whisk eggs with milk until creamy. Then add in melted butter, vanilla essence and salt. Beat well. Add into flour mixture. Stir in blueberries.

Spoon batter carefully into greased muffin tins until 3/4 full. Bake at 190°C for half an hour until muffins have risen and turned golden.

Best served warm over tea or coffee!

TIPS & TRICKS

TEATIME WITH MUFFINS

Sift dry ingredients together
- so that muffins rise well

Mix wet & dry ingredients
- separately
- add wet ones in dry mixture

Mix batter by hand
- not by electric mixer

Don't overmix batter
- mix till flour is just moistened
- batter should be lumpy
- to prevent flat tops

Fill muffin cups 2/3 full
- for nice round tops

Dust fruits and nuts with flour
- to prevent sinking

Always preheat ovens
- for correct baking time

When greasing muffin tins
- also grease the top part
- then muffin tops won't stick

Best eaten within 2 days
- of baking
- can freeze for 1 - 2 months
- to reheat, bake at 200°C

To reduce egg yolk
- replace 1 egg with 2 whites
- use non fat milk
- more oats in place of flour
