Cappuccino Cheesecake Recipe

Ingredients3 tbsp Melted Butter
2 tbsp Brown Sugar
1 1/2 cups Finely Chopped Walnuts
850 g Cream Cheese; softened
3/4 cup Fine Sugar
3 tbsp All-Purpose Flour
4 Large Eggs
1 cup Sour Cream
1 tbsp Instant Coffee
1/4 tsp Ground Cinnamon
1/2 tsp Coffee Emulco
1/4 cup Boiling Water
Method
Mix together butter, brown sugar and chopped walnuts and press mixture onto base of a 9-inch springform cake pan. Bake at 170 °C for 10 minutes. Beat softened cream cheese, fine sugar and flour at medium speed until well blended. Add eggs, one at a time, beating well with each addition. Add in sour cream. Meanwhile, dissolve instant coffee and cinnamon in water. Allow to cool before adding to cream cheese mixture, mixing until well blended. Lastly, add coffee emulco. Pour cheese mixture over baked crust. Bake at 230°C for 10 minutes first before lowering heat to 130°C. Continue baking for another 40 to 50 minutes. Let cheesecake cool before removing from baking pan. Chill overnight. Decorate with whipped cream and whole mocha beans as desired.
