Sugar Free Diabetic Desserts - Heavenly Cheesy Chocolate Pie

This Cheesy Chocolate Pie is one of the many favourite diabetic desserts which deliciously combine both chocolate and rich ricotta cheese. No sugar is used here, unlike the usual chocolate dessert recipes, so you can help yourself to as many slices as you wish.



Sugar Free Chocolate Pie

Ingredients for Filling

1 packet				Gelatine Powder; unflavoured
1 cup			        	Low Fat Ricotta Cheese
10 packets 		         	Sugar Substitute
1 packet				Low-Calorie Whipped Topping
1 1/3 cups		         	Skimmed Milk
1 tsp			         	Vanilla Essence
1 tsp			        	Coffee Essence
1/3 cup				Cocoa Powder

Ingredients for Graham Cracker Crust

1 1/3 cups		        	Graham Cracker; crushed into crumbs
1/2 cup				Unsalted Low Fat Butter; softened

Method

To prepare crust, mix cracker crumbs with butter until Combine crumbs with diet margarine by cutting in softened margarine until mixture turns to coarse crumbs. Spread evenly and press firmly onto bottom of pie pan. Bake at 180°C for 10 minutes.

To prepare filling, blend cheese until smooth. Meanwhile, cook gelatine with 3/4 cup skimmed milk at low heat until gelatine dissolves. Add blended cheese into gelatine mixture. Add in remaining milk, cocoa powder, vanilla and coffee essences. Blend until smooth.

Add 8 packs of sugar substitute into cheese mixture. Blend well. Pour cheese mixture into pie crust and chill well for an hour.

Add remaining sugar substitute into whipped topping. Whisk this topping well. Spread onto chocolate layer and sprinkle with cocoa powder.

Chill well before serve.
