Diabetic Desserts - Chewy Pecan Cookies

Low Sugar Chewy Pecan Cookie Ingredients 1 cup Whole Grain Wheat Flour
1 tsp Baking Powder
1 cup Warm Water
1 cup Dates; chopped
1/2 cup Golden Raisins
1/2 cup Tart Apples; peeled and chopped
1/2 cup Corn Oil
1 cup Instant Oats
2 Medium Eggs; lightly beaten
1 tsp Vanilla Essence
1 cup Pecans; coarsely chopped
Method
This is a drop cookie recipe, so be ready with a large spoon. Sift wheat flour together with baking powder. Set aside first. Meanwhile, cook dates, raisins and apples in water and let it boil, then simmer for 5 mintues. Turn off heat. Stir in corn oil. Allow mixture to cool before adding in eggs and oatmeal. Blend well. Mix in sifted flour mixture and oats, add in vanilla essence and lastly, pecans. and thedry ingredients; add the vanilla and nuts. Cover and chill overnight. Drop on cookie sheets, allowing 2 inches apart from each drop. Bake at 190°C for about 20 minutes or until cookies turn golden. Keep cookies in air tight container in a refrigerator to maintain freshness.
