Biscotti Cookie Recipe

Chocolate Almond Biscotti



Serve light desserts like this homemade Chocolate Almond Biscotti for afternoon tea with family and friends. This chocolate biscotti cookie recipe is not plain biscotti - it includes toasted almond flakes and a hint of lemon zest. This is an interesting recipe for a chocolate dessert for biscotti and I am sure you will like it!


Ingredients
2 cups				Almond Flakes; toasted
80 g 			        	Semi-sweet Chocolate
5 tbsp		        	Butter
2 cups 				All-Purpose Flour
1 1/2 tsp 				Baking Powder
3 			        	Large Eggs
2/3 cup				Granulated Sugar
1 tsp			        	Grated Lemon Zest

Method

Melt chocolate and butter together over a saucepan of boiling water. Turn off heat and stir gently until smooth. Leave to cool.

Sift flour and baking powder together. Meanwhile, lightly whisk eggs and beat in sugar gradually. Add lemon zest. Stir in cooled chocolate until well-blended. Stir in flour mixture. Fold in the almond flakes.

Divide dough in half. Wrap each in a plastic wrap and chill overnight (mininum 2 hours).

Grease cookie sheet and preheat the oven to 190°C. Mould each dough into 13 x 3 inch log. Arrange on sheet about 5 inches apart from each dough.

Before baking, smoothen the dough with a spatula.

Bake for 50 minutes. Logs are ready when pressed in the center. Remove sheet from oven but do not turn off oven as yet.

Cut each log diagonally into no more than 1/2-inch slices. Place slices on the edge of the sheet. Return sheet to oven and bake for another 15 minutes or until crisp.

Leave to cool.
