Chocolate Amaretto CheesecakeIngredients 1 1/2 cup Chocolate Wafer Crumbs
1/3 cup Heavy Cream
1 cup Blanched Almonds, lightly toasted and chopped
1/2 cup Amaretto
2 tsp Vanilla Essence
1/3 cup Sugar
4 Eggs
6 tbsp Butter, softened
2 cup Sour Cream
680 g Cream Cheese, softened
1 tbsp Sugar
1 cup Sugar
1 cup Blanched Almonds, lightly toasted
Method
Preheat oven to 190°C. Mix together wafer crumbs, chopped almonds, 1/3 cup sugar and softened butter. Press mixture onto bottom and sides of a 10-inch springform pan. Blend together at medium speed, the cream cheese, 1 cup sugar, heavy cream, liqueur, and 1 tsp vanilla essence. Beat in eggs, one at a time, beating well with each addition. Beat mixture until light and smooth. Pour into crumb-lined pan. Bake in preheated oven for 45 minutes to an hour or until skewer inserted in middle comes out clean. Allow to stand on rack for 5 minutes. Meanwhile, combine sour cream, 1 tsp vanilla, and sugar. Mix well and spread evenly over cake. Bake for 5 more minutes. Place on rack and let cool completely. Cover lightly with wax paper and chill overnight. When ready to serve, remove sides from pan and garnish with toasted almonds around outer edge of and on to cake.
