Fill Your Cookie Jar with These Splendid Chocolate Cookies!
Chocolate cookies are one of kids best loved chocolate desserts especially if they are generously filled with chocolate chips and nuts. Chocolate biscotti are thoroughly enjoyed by adults - these desserts are most delicious when dunked into our favourite beverages. Generally, chocolate cookies are common Christmas cookies where they are packed as dessert gifts or prettily wrapped in colourful boxes.
Normally, you will find two types of cookies in any chocolate dessert recipes. The easiest to make are drop cookies where a spoon is used to scoop the soft dough and then drop onto the cookie sheet. The other type are rolled cookies where the dough has to be chilled before rolling.
If you want your cookies to turn out well, do keep in mind several useful pointers.
Butter - Use good quality butter. The butter must not be melted or look like a blob, instead it must be firm yet soft.
Rolling dough - chill dough well before rolling in order to relax the gluten. The dough will stick to your rolling pin if too soft. It will be messy. Best to roll out in batches so that you will always have chilled dough to work with.
Baking - best to use shiny cookie sheet for even browning during baking. Before placing the next batch, the cookie sheet must be cooled first. If not, the residual heat will melt the dough.
Allow sufficient space between cookies as they will expand. You would not want your cookies to stick to one another. Always preheat oven first before baking the first batch.
Maybe you want to decorate your cookies as well?Best to use raisins or other dried fruits or silver (or gold) dragees if you intend to decorate your cookies before baking. If you like to paint onto cookies, you can mix egg yolks with drops of your desired food colouring for paint. Brighter colourings will bring out the best desserts of your homemade chocolate cookies. Frostings and icings are perfect as decorations on chocolate cookies after baking is done. Frostings are thick and can be piped into cute rosettes whereas icing is more liquid and looks smooth when it hardens. How about biscotti? Biscottis, as its Italian name suggests, are basically twice-baked loaves. They are cut into slices and rebaked. Biscottis are Italian treats and originated near Tuscany, Italy. Most commonly enjoyed, other than the basic original recipe, is the almond biscotti. Dry in texture, they are low in fat and ideal to dunk into hot beverages for breakfast or afternoon tea. The recipes usually use shortening or butter which result in a shortbread-like texture which is soft in the centre. When baking biscotti, it is best to use lined baking sheets so that you can remove them easily. One thing to remember, a normal biscotti dough is dry, so do not be misled into thinking that you should add water to moisten it. That would be a big mistake!
