Chocolate Fruit Cake



The Chocolate Fruit Cake is a classic baking recipes favourite among many homes all over the world. In fact, it just may be one of the most consumed chocolate dessert recipes on earth!

The richness of chocolate is much compensated by the fruits and raisins and depending on the amount of fruit ingredients this may very well make up for some fruit dessert recipes.

A good fruit cake must be moist on the inside to taste its best Dessert recipe below show exactly how to achieve this.


Ingredients

115 g 				Fruit Mix
200 g  				Cherries; cut into halves
200 g 	 			Almonds; chopped
500 g 				Self-raising Flour; sifted
50 g  			        	Cocoa Powder
440 g 				Brown Sugar
425 g  				Margarine
2 tsp			         	Baking Powder
1 tsp			         	Baking Soda
2 tsp			        	Cinnamon Powder
8 			         	Large Eggs; at room temperature

Method

Soak the fruit mix in warm water for an hour. Drain well of water before mixing with cherries and almonds.

Blend margarine with sugar till light and fluffy. Add in eggs one at a time. Do not overblend the batter.

Sift the self-raising flour and cocoa powder with the baking powder before folding gently into the batter. Add baking soda and cinnamon powder.

Lastly, add in fruit mix and mix well.

Pour into greased pan and bake at 180°C for 50 minutes to 1 hour till cake is done.

To get a moist fruit cake, you can always place a cup of water in the oven during baking.

When cake is ready and still warm, spread the top of the cake with brandy and honey for added taste and sheen.

BAKING CAKES?

Sift dry ingredients together
- for even distribution

Butter at room temperature
- for enough air in batter

Beat eggs one at a time
- so that each is well blended

Fold batter, not stir
- with a spatula, one direction
- for lighter, fluffier cake

Do not over-mix batter
- or cake will be tough

Grease & flour pans
- for butter cakes only

Always preheat oven
- or cake will not bake well
- cooking time will be wrong

Cool cake before decorating
- to prevent crumbly top

Coat fruits & nuts with flour
- to prevent sinking to bottom
