Biscotti Cookie Recipe

Chocolate Hazel Biscotti

Ingredients
120 g			        	Semi-sweet Cooking Chocolate
1/2 cup				Butter; room temperature
1/2 tsp				Vanilla Essence
3 			        	Large Eggs
1			        	Egg White; lightly beaten
1 cup			        	Castor Sugar
3 cups				All-purpose Flour
1 tsp 			        	Baking Powder
1 cup			        	Hazelnuts; chopped into small pieces

Method

Over a saucepan of boiling water, melt chocolate and butter.

With an electric mixer, beat eggs at medium speed until frothy before adding sugar (gradually). Beat until mixture becomes dense and light in colour.

Add chocolate mixture and keep stirring until well-blended. Combine both flour and bakingpowder and stir into chocolate mixture.

Add in nuts. Sprinkle a bit of flour on the worktop and roll dough into a 12-inch log. Place rolled dough onto a lightly greased baking sheet. Brush the dough with egg white. Bake at 180°C for about 40 to 45 minutes. Leave to cool.

Cut log diagonally into 1/2-inch slices, and place on ungreased cookie sheet. Bake at 180°C for 8 to 10 minutes on each side. Leave to cool.
