Christmas Dessert Recipes

Christmas Cheesecake



Delight your family with this special Christmas Cheesecake, a sure favourite amongst the Christmas dessert recipes here as it is loaded with sweet cherries and pecans. Cream cheese desserts are much sought after in Christmas desserts parties, yes, as much as chocolate desserts, so most of you would give this recipe the thumbs up!


Ingredients
250 g			        	Cream Cheese; at room temperature
1 cup 				Butter; softened
1 1/3 cups 		        	Castor Sugar
1 tsp			        	Vanilla Essence
1 tsp			        	Cinnamon Powder
4 			        	Medium Eggs
2 1/4 cups		        	Self-raising Flour; sifted
1 tsp (heap)			Baking Powder
200 g			        	Cherries; red and green
1 cup			        	Chopped Pecans
1 cup			        	Icing Sugar
3 tbsp				Fresh Lemon Juice

Method

Drain cherries before chopping them into small bits. Mix some flour onto cherries bits and chopped pecans to coat them. Set aside first.

Using an electric mixer, beat cream cheese together with butter and castor sugar until creamy and smooth. Add in vanilla and cinnamon powder. Beat in eggs, one at a time, beating well with each addition.

Meanwhile, add baking powder to self-raising flour. With a large spoon, fold in flour into egg batter until no more flour lumps. Add in chopped mixed cherries (150 g) and pecans, mix until just blended.

Sprinkle remaining cherries onto base of greased baking pan before pouring in the cheese batter. Bake in preheated oven at 180°C for about 50 minutes or until skewer inserted into center of cake comes out clean.
