Coconut Cheesecake Recipe



This Coconut Cheesecake recipe is one baked cheesecake recipe for delicious cream cheese desserts which combines chocolate , coconut and cheese, essentially all 3 C's! Coconut cheesecakes could be one of the best desserts that you can serve and enjoy with friends over tea.


Ingredients
3 tbsp 		        	Butter; melted
200 g	        	        	Dessicated Coconut; toasted
1/3 cup 	        		Chopped Brazil Nuts
450 g	        	        	Cream Cheese; softened at room temperature
1/3 cup 	        		Castor Sugar
3 tbsp 		        	Cocoa Powder
2 tbsp 		          	Boiling Water
1 tsp 		                	Vanilla Essence
3  		                	Large Eggs; white and yolks separated
1/2 tsp		              	Salt
150 g	                		Marshmallow Creme
1/2 cup 	         		Chopped Brazil Nuts

Method

Combine coconut, brazils, and butter, press onto bottom of 9-inch springform pan. Baked for 5 minutes. Leave to cool.

Beat softened cream cheese, sugar, cocoa powder, water and vanilla at medium speed until well blended. Blend in egg yolks well. Pour cheese mixture over crust. Bake at 180°C for 30 minutes. Allow to cool.

Whisk egg whites and salt until frothy and add marshmallow creme gradually. Continue to beat until stiff peaks are formed. Sprinkle chopped nuts over cheesecake. Spread marshmallow creme mixture over cheesecake to seal.

Bake again at 180°C for 15 to 20 minutes. Remove from oven. Chill for at least 5 hours before serving.
