Healthy Sugar Free Coconut Cream Pie
Sugar Free Coconut Cream PieIngredients 1 8-inch Pie Shell; baked
4 tbsp Vegetable Shortening
4 Medium Eggs; lightly beaten
3 tbsp Pure Coconut Milk
5 tbsp Cornflour
8 tsp Sugar Substitute
1 1/2 cups Water
1 tsp Vanilla Essence
1/2 cup Yogurt; unsweetened
1 cup Breadcrumbs
1/4 tsp Salt
1/2 cup Cornflakes; crushed
1/4 cup Dessicated Coconut
1/4 cup Chopped Pecans
Method Mix cornflour with water until dissolved. Add in sugar substitute. Leave aside. Beat eggs until light. Add in shortening followed by coconut milk. Add in cornflour mixture and vanilla essence. Stir in yogurt, breadcrumbs and salt. Pour batter onto ready pie crust. Bake at 180°C for 50 minutes until pie filling turns golden. Mix cornflakes with dessicated coconut and pecans and sprinkle generously over pie filling.
