The Crunch In Cookie Recipes



If you find cookie recipes a challenge, you are not alone. I have my own disaster stories to tell.

One of my early experience with baking cookies had my mother calling my Amaretti cookies bricks and stones. They were so hard you could barely take a bite on them. As you might expect, within moments, my cookies were a stone's throw away! That was my first attempt. Not the best desserts one would expect!

Unfazed, I attempted other dessert recipes and learnt along the way before coming back for more cookie recipes. As you make more cookies and more types of cookies, you will find the learning journey to be both enjoyable and satisfying.

There are generally five types - drop cookies, molded cookies, pressed cookies, rolled cookies and bar cookies - and each needs to be handled differently.

Drop Cookies

These cookies are easiest to make. The dough is soft and you will need a spoon to drop even sizes of cookie dough onto the baking sheet. Unlike most baking recipes, you will not need to grease the cookie sheet. And the sheet cannot be too warm else the cookies will melt and you will end up with misshapen cookies. Leave enough space between each to allow cookies to expand. So, if you are a beginner, why not start with drop cookies?

Molded Cookies

These cookies are usually made by hand and shaped into balls or other desired shapes. Peanut butter cookies are molded cookie types.

Snow Drops
Rocky Christmas Snow Balls

Pressed Cookies

This type usually requires soft but pliable dough and is pressed with the desired cookie cutter or through a pastry tube. The dough should not be crumbly or you will have a hard time getting the dough together to press.

Pineapple Tarts

Rolled Cookies

The dough is chilled before rolling and cutting. It has to be a stiff and firm dough for easy cutting. It is recommended to work in small batches as the dough will soften. These cookie dessert recipes are usually decorated.

Sultana Cookies

Bar Cookies

The dough is firmly pressed into a baking pan. After baking, the dough will be cut into even bars. For example, brownies (cake-like texture) and cereal crispies.

Always preheat oven before baking. After baking, remove cookies immediately from baking sheet. The reason is the sheet is still warm and your cookies will still be baking on the sheet and you will find it difficult to pry them off the sheet later.

Sift dry ingredients together
- so that evenly distributed

Butter is best for cookies
- binds dough better
- for crispy cookies

Freeze dough before cutting
- for cut out cookies

If dough is dry
- add some milk for moist

Do not overbake
- or cookies will be tough

Always preheat oven
- or cookies will not bake well
- cooking time will be wrong

Use shiny cookie sheets
- for even browning

Rotate sheet during baking
- for even baking

Leave space between cookies
- cookies'll expand during baking
