Cranberry Cheesecake Recipe



b>Cranberry Cheesecake recipe here are delectable cream cheese desserts that require a certain amount of patience in preparation. There are two types of fillings to prepare for this baked cheesecake recipe - the cranberry and the chocolate cheese filling. However, this cheesecake that is rich with cranberry flavour is one of the best desserts you can prepare as after dinner desserts.

Here's your Cranberry Cheesecake recipe :


Ingredients For Crust

1 1/2 cups 	                	Plain Flour
3/4 cup 	        		Finely Ground Pecans
1/3 cup 	         		Fine Sugar
1 		                	Large Egg; yolk and white separated
1/2 cup 	        		Butter; softened at room temperature

Ingredients For Cranberry Filling
1 can Cranberry Sauce 2 tbsp Fine Sugar 1 tbsp Cornstarch 1 tbsp Grated Lemon Zest 1 tbsp Lemon Juice Ingredients For Chocolate Filling
1 1/2 cups Fresh Orange Juice 1 tbsp Orange Peel 1 tbsp Grated Orange Zest 230 g Cream Cheese 1/2 cup Fine Sugar 2 tbsp Cranberry Liqueur 250 g White Chocolate; melted 4 Medium Eggs Ingredients For Garnish
2 cups Whipped Cream 1 1/2 cups Icing Sugar 1 cup Candied Orange Slices

Method

To prepare crust:
Mix together plain flour, ground pecans and sugar. Create a well in the cente and add egg yolk and softened butter in the center. Use fingers to mix them thoroughly and shape the dough into a ball. Wrap with clingwrap and chill for 30 minutes.

Remove from fridge and roll out to 1/4 inch thick and 10 inches in diameter. Cut crust in a 9 inch circle and lay it inside springform pan. Using a fork, prick the crust several times so that the crust will not rise during baking. Bake in preheated oven at 200°C for 20 minutes or until crust is golden brown. Leave to cool.

Press remaining dough against sides of the pan to line the pan. Ensure there is a continuous layer of crust all way around the sides and that it meets the bottom crust. Brush egg white all over crust to seal the dough. Set aside first.

To prepare cranberry filling:
In a saucepan, mix sugar, cranberry sauce and cornstarch together and stir over medium heat. Keep stirring until mixture is thick. Turn off heat and add lemon zest and juice. Leave to cool slightly.

To prepare chocolate filling:
Boil orange juice with orange peel until juice is concentrated, about 10 minutes. Discard peels.Beat together cream cheese, sugar, grated orange zest, cranberry liqueur and concentrated orange juice until smooth. Add in melted white chocolate and then eggs, one at a time, beating until just blended.

Spread cranberry filling evenly into prepared crust. Next, spread white chocolate filling over this cranberry layer. Bake at 180°C for 40 - 50 minutes until the sides are slightly puffed up.

Allow cake to cool completely. Chill overnight. Remove cake from pan before decorating.

Whisk whipped cream with icing sugar until thick. Spread whipped cream all over cake and arrange candied orange slices at the edges of the cake. Chill again before serving.
