Diabetic Desserts - Low Sugar Crunchy Chocolate Cookies

Kids will love these Crunchy Chocolate Cookies which is one of the favourite low sugar desserts in the diabetic dessert recipes collection. Crunchy Low Sugar Chocolate Cookies

Ingredients

1/4 cup				Corn Oil
1 cup			        	Whole Grain Wheat Flour
1 1/2 tsp				Baking Powder
1 			         	Large Egg; lightly beaten
1 tsp			        	Vanilla Essence
1/2 cup				Chocolate Chips; semi-sweet
1/4 cup				Chopped Almonds
1/4 cup				Chopped Pecans
4 tsp			        	Liquid Sweetener
1/2 tsp				Salt

Method

Mix together corn oil, wheat flour and baking powder. Add in vanilla essence, sweetener and salt. With an electric mixer, beat flour mixture with beaten egg at high speed until light and fluffy.

Add in chocolate chips, almonds and pecans with 1/2 cup of chilled water. Ensure batter is well-blended. With a spoon, drop a spoonful each onto ungreased cookie sheet. Bake at 210°C for about 10 to 15 minutes.
