Low Sugar Diabetic Banana Cake with PecanIngredients 2 cups Cake Flour; sifted
1 tsp Baking Soda
1/2 cup Corn Oil
2 Large Eggs; lightly beaten
3 Bananas; ripe
1 1/2 tbsp Liquid Sweetener
4 tbsp Buttermilk
1 cup Raisins
1/4 tsp Salt
1 tsp Banana Essence
1 1/2 cups Pecans; coarsely chopped
Method
Pre-heat oven to 160°C. Sift together cake flour with baking soda. Leave aside. Beat corn oil with sweetener. Add eggs. Beat at medium speed for about 2 to 3 minutes before adding the rest of the ingredients. Beat until well blended. Fold flour mixture into egg mixture. Pour batter into greased baking pan. Bake at 180°C for 30 minutes or until cake turns golden.
