Diabetic Blueberry CheesecakeIngredients 2/3 cup Low Fat Cottage Cheese
1 tsp Vanilla Essence
1/3 cup Low Fat Milk Powder
3 tsp Sugar Substitute
1 tsp Lemon Juice
1 packet Gelatine Powder; unflavoured
2/3 cup Hot Water
2/3 cup Blueberries; fresh
Method
Beat cottage cheese with an electric mixer at medium speed until creamy. Add in vanilla essence, milk powder, sugar substitute and finally lemon juice. Meanwhile, in a separate bowl, mix gelatine powder in hot water and blend until smooth. Pour gelatine mixture gently into cheese mixture, blending just well. Do not overblend. Lastly stir in blueberries, ensuring they are evenly spread in the batter. Chill until set. Best when serve cold.
