Diabetic Carrot CakeIngredients 1 1/2 cups Cake Flour; sifted
1/4 cup Whole Wheat Flour; sifted
1 1/2 tsp Baking Powder
1/2 tsp Ground Cinnamon
1/2 tsp Ground Ginger
1/2 tsp Salt
1/2 cup Corn Oil
6 tbsp Sugar Substitute
2 Large Eggs
1/4 cup Pineapple Juice; unsweetened
1 tsp Vanilla Essence
1 cup Shredded Carrots
1/2 cup Black Raisins
Method
Preheat oven to 180°C. Sift together cake flour, wheat flour and baking powder. Lightly mix in ground cinnamon, ground ginger and salt. In another bowl, beat oil with eggs, pineapple juice, sugar substitute and vanilla. Fold in flour mixture gently until well-blended. Add shredded carrots and raisins. Pour batter into greased baking pan and bake for 30 to 40 minutes or until a skewer inserted into cake comes out clean.
