Low Sugar Diabetic Coconut Cookies

Low Sugar Coconut CookiesIngredients 1/2 cup Dates
2/3 cup Cold Water
3/4 cup Corn Oil
1 cup Dessicated Coconut; dried
1 Large Egg; lightly beaten
1/4 tsp Ground Nutmeg
1 tsp Ground Cinnamon
1 tsp Vanilla Essence
1/4 tsp Salt
1 tbsp Sugar Substitute
1 tsp Baking Powder
1 cup Whole Grain Wheat Flour
Method
Soak dates in cold water for 10 minutes. Boil this together with corn oil for 5 minutes. Add in beaten egg and blend well. Stir in ground nutmeg, cinnamon, vanilla essence, sugar and salt. Ensure mixture is well-blended. Now add in dessicated coconut followed by wheat flour and baking powder. Blend well using a large spoon. Allow mixture to stand for 3 minutes. With a teaspoon, drop onto greased cookie sheet. Leave at least 1 1/2 inches apart. Bake at 180°C for 10 o 15 minutes or until cookie turns golden at the edges.
