Low Sugar Diabetic Coconut Cookies

Our diabetic dessert recipes feature the Low Sugar Diabetic Coconut Cookies which have a rich coconut flavour. Contrary to what most people feel, diabetic desserts do not have to be bland. You can choose to enhance the flavour of such low sugar desserts by adding some dates (which are just slightly sweet) or your favourite nuts. Baking is fun, so get your hands dirty with our dessert recipes and show off to your family and friends!


Low Sugar Coconut Cookies

Ingredients

1/2 cup				Dates
2/3 cup				Cold Water
3/4 cup				Corn Oil
1 cup			        	Dessicated Coconut; dried
1 			          	Large Egg; lightly beaten
1/4 tsp			 	Ground Nutmeg
1 tsp			        	Ground Cinnamon
1 tsp			        	Vanilla Essence
1/4 tsp				Salt
1 tbsp				Sugar Substitute
1 tsp			        	Baking Powder
1 cup			        	Whole Grain Wheat Flour

Method

Soak dates in cold water for 10 minutes. Boil this together with corn oil for 5 minutes.

Add in beaten egg and blend well. Stir in ground nutmeg, cinnamon, vanilla essence, sugar and salt. Ensure mixture is well-blended. Now add in dessicated coconut followed by wheat flour and baking powder. Blend well using a large spoon. Allow mixture to stand for 3 minutes.

With a teaspoon, drop onto greased cookie sheet. Leave at least 1 1/2 inches apart. Bake at 180°C for 10 o 15 minutes or until cookie turns golden at the edges.
