Low Calorie Diabetic Lemon Cheesecake

This Diabetic Lemon Cheesecake recipe is one diabetic dessert recipe which is low in calorie, low in sugar and low in fat. Fruit Sweet is used in this recipe as the natural sweetener to replace refined sugar. Fruit Sweet is made from pure fruit syrups and is low in calories, fat-free and low-glycemic. This homemade low sugar lemon cheesecake recipe will tease your tastebuds no end!




Low Sugar Lemon Cheesecake

Ingredients

350 g		        		Low Fat Ricotta Cheese
300 g		        		Low Fat Cottage Cheese
4 		        	        	Medium Eggs; yolks and whites separated
2/3 cup		        		Fruit Sweet
5 pieces        				Graham Crackers; crushed finely
2/3 cup	        			Low Fat Milk Powder
1	        		        	Lemon; peel grated 
6 tbsp	        			Lemon Juice
1 tsp			         	Vanilla Essence

Method

Spread evenly graham cracker crumbs onto the bottom of a greased springform pan. Leave aside.

Blend both cream cheese with egg yolks until light and creamy. Add in Fruit Sweet. Blend in milk powder and beat until smooth. Add in vanilla essence, lemon juice and peel and continue to beat at medium speed.

Meanwhile, whisk egg whites until stiff and frothy. Fold beaten egg whites into cheese mixture. Pour cheesecake mixture into greased baking pan.

Bake at 175°C for 40 to 50 minutes over a bowl of water in the oven to ensure cake is moist. Cake is done when skewer inserted into cake comes out clean.

Best serve chilled.
