Diet Cherry Cheesecake Recipe

Ingredients For Cake1 cup Cottage Cheese
3 sachets (to taste) Artificial Sweetener
1 tbsp Lemon; grated rind
1 tsp Vanilla Essence
2 Eggs; yolks and whites separated
1/4 cup Evaporated Skimmed Milk
1/3 cup Non-fat Milk Powder
Ingredients For Topping
1 cup Fresh Cherries; seeds removed
1/4 cup Cherry-flavored Beverage
1 sachet (to taste) Artificial Sweetener
1/2 tsp Cherry Essence
Method
To prepare cheesecake: Beat together cottage cheese, sweetener, lemon rind, vanilla essence until smooth and creamy before adding egg yolks. Beat well. Add in evaporated milk and milk powder and continue to blend. Meanwhile, whisk egg whites until stiff peaks formed. Fold beaten egg whites into cheese mixture. Pour cheese mixture into springform pan. Bake in preheated oven at 180°C for 40 minutes. Allow to cool before spreading with topping. To prepare topping: Cook cherries in beverage until cherries become soft and tender and sauce becomes concentrated. Stir in sweetener and spread evenly over baked cheesecake. Bake for another 5 minutes.
