Durian Cheesecake Recipe

Ingredients

450 g		                	Cream Cheese; softened
450 g	        	        	Ricotta Cheese
1 cup 	      	     	     	Fine Sugar
4 		                	Medium Eggs
2 cups				Durian Flesh; mashed
1/2 tsp 		        	Vanilla Essence
3 tbsp 		          	Cornstarch
3 tbsp 		        	Plain Flour
1/4 cup 	         		Melted Butter
450 g		                	Sour Cream

Method

Beat together ricotta and cream cheese, and add sugar. Beat in eggs, one at a time, beating well with each addition. Add durian flesh, vanilla essence, cornstarch, plain flour and butter.Mix well. Lastly, fold in sour cream and pour into greased 10-inch springform pan.

Bake at 170°C for 50 minutes. Turn off heat but leave cheesecake in oven for another hour. Leave the oven door closed. Remove cake and chill, covered, in fridge overnight.
