Easy Bread Pudding
Easy Bread Puddings are healthy pudding desserts which you can serve as after dinner desserts as they are loaded with milk (calcium) and especially of you use wholemeal bread instead of white bread. The wholemeal bread in this healthy dessert recipe adds to that interesting grainy texture to the pudding as compared to the usual white bread variety.These are really easy healthy recipes which are easy to follow and quick to make and there are no requirement to fold or sieve anything. Just mix the ingredients together and bake, yes, basically. If you do not like your pudding sweet, there is a way out. Just remove the brown sugar from the recipe. Instead, only drizzle with a little honey after the pudding is baked for flavour.
Ingredients 5 slices Wholemeal Bread; crust removed
900 ml Hot Boiling Low Fat Milk
2 Large Eggs
3 tbsp Brown Sugar
1/4 tsp Salt
1 tsp Lemon Essence
2 tbsp Butter; room temperature
3 tsp Cinnamon Powder
2 tbsp Black Raisins
4 tbsp Almond Flakes
Method
Arrange bread slices in a baking dish and pour over boiling milk. Allow mixture to stand until the bread slices are soft and completely soaked with the milk. Use a fork to beat up the bread until well blended with the milk. Meanwhile, beat eggs with sugar until light and creamy. Pour egg mixture onto the bread mixture. Add lemon essence and salt stir for a minute. Add small dollops of butter here and there onto pudding mixture. Stir in raisins until just blended. Sprinkle generously with almond flakes before sprinkling with cinammon powder. Bake in preheated oven at 170°C until pudding has set and turned golden brown. Serve while pudding is hot.
