Quick Easy Dessert Recipes

Homemade Easy Fruit Cake



This Easy Fruit Cake recipe is one of the simple fruit dessert recipes that I made one weekend morning - it took me just 30 minutes to prepare. The fruit mix I used were flavourful enough so I need not soak them in brandy as most fruit dessert recipes would require.

Baking the cake does not take up much time either, just 40 minutes and the cake is ready to be enjoyed. I still remember the astonishment on my husband's face as he came down to the kitchen for breakfast that morning and found the cake already baked and smelling so good. This is one of the quick easy dessert recipes that is definitely well worth a try!

Easy Fruit Cake



Ingredients
220 g			        	Butter; softened at room temperature
120 g			        	Castor Sugar
6 tbsp				Milk; 3 tbsp milk powder in 6 tbsp water
200 g			        	Self-raising Flour
1 tsp			        	Baking Powder
4			        	Medium Eggs
1 tsp			        	Vanilla Essence
1/4 tsp				Mixed Spice
60 g			        	Mixed Fruits; lightly coated with flour
2 tbsp				Chopped Walnuts

Method

Mix together chopped walnuts with mixed fruits.

Sprinkle a little bit of flour on them. Coat them well.

This will prevent fruits and nuts from sinking to the bottom during baking.

Sift flour together with baking powder and mixed spice. Set aside first.

Cream butter until creamy before adding tablespoons of sugar gradually. Beat well until sugar has completely dissolved.

Add eggs, one at a time, beating well with each addition. Add vanilla essence.

With a large metal spoon, fold in sifted flour mixture in 3 batches, alternating with the milk for a moist cake.

Fold the mixture until you get a honeycomb texture. Add in mixed fruits and walnuts, mixing until just blended.

Ready To Bake

Pour cake batter into a greased tube pan and bake in preheated oven at 165ºC for 30 minutes before reducing the heat to 150ºC and bake for another 5 to 8 minutes.

Allow cake to cool on a rack.

Sift dry ingredients together
- for even distribution

Butter at room temperature
- for enough air in batter

Beat eggs one at a time
- so that each is well blended

Fold batter, not stir
- with a spatula, one direction

- or cake will be tough

Grease & flour pans
- for butter cakes only

Always preheat oven
- or cake will not bake well
- cooking time will be wrong

Cool cake before decorating
- to prevent crumbly top
