Diabetic Dessert Recipes - FruitMix Pudding

You will love the FruitMix Pudding in our diabetic dessert recipes collection if you are into fruits. This diabetic desserts recipe has an interesting mix of bananas (rich in potassium), peaches and cranberries (infused with vitamin C ). I would recommend using wholemeal bread instead of white and it will still be as tasty. You can spice up this pudding with ground nutmeg.

Pudding recipes are usually quick and easy desserts to make and you can get your kids to help mix the ingredients. You can decorate the pudding with fresh frozen cranberries and peaches.


Fruit Mix Pudding

Ingredients

4 slices 				Wholemeal Bread; crust removed and toasted
1/2 cup				Sliced Peaches; with juice
2			        	Medium Bananas; thinly sliced
1/2 cup				Cranberries
1/2 cup				Brown Sugar Substitute
1/2 tsp				Ground Cinnamon
1/3 cup				Water
1/2 tsp				Banana Essence
1/2 tsp				Ground Nutmeg (Optional)

Method

Cut toasted wholemeal bread into even cubes and arrange onto baking sheet. Spoon peaches, bananas and cranberries onto toasted cubes.

Meanwhile, stir brown sugar substitute and ground cinnamon in water. Add banana essence. Pour gently over fruit mixture. Fold thoroughly with a large spoon until cubes are well coated with fruit and sugar mixture. Allow to stand for 5 minutes. Fold once more for about 2 minutes. Spoon pudding mixture into baking dish and bake at 170°C for 30 minutes. Sprinkle ground nutmeg over pudding mixture before serving.
