Fusion Salmon With Arrowhead



We had the Fusion Salmon With Arrowhead dish for dinner recently. This Chinese fish recipe, in fact, are included in our collection of Chinese New Year recipes for small and young families. Alaskan salmon, more specifically the king salmon, is known to be more flavourful than the rest, if you prefer.

Instead of potatoes as the side dish, we had arrowheads, which are usually available during the Chinese New Year season. Arrowheads tasted as good as potatoes.

When buying arrowheads, ensure that the colours are fresh white and the arrowhead feels hard as you grasp it. Before cooking, clean and peel arrowheads thoroughly. The arrowhead is slightly bitter and best if cooked with oyster sauce and a fitting dash of sesame oil.

Fusion Salmons With Arrowheads



Ingredients
2 blocks				Salmon; sides scaled
2 cups				Brocollis; cut up
4 pcs	             			Arrowheads; cleaned, peeled
2 tbsp				Honey
3 cloves				Garlic
2	          			Large Onions; sliced
2 tbsp				Oyster Sauce
1 tbsp				Sesame Oil
	            			Pepper; to taste
					Cooking Oil			

Method

Cut arrowheads into cubes. Set aside first.

Brush both sides of salmon with honey. Leave for 10 minutes.

Pour 2 tbsp of oil onto pan. When oil is hot, pan fry salmon blocks until slightly golden brown on both sides. (Salmons cook easily). Remove from pan and transfer onto serving plate.

On a clean pan, pour in 4 tbsp of oil. Stir fry garlic and onions until fragrant. Add arrowhead cubes and fry until slightly golden.

Frying Arrowheads And Onions

Add oyster sauce and pepper. Keep stirring. Add in 2 tbsp of water for moist. Once arrowheads begin to soften, drizzle over with sesame oil. Add a dash of pepper. Stir fry a while. Turn off heat. Transfer onto plate, next to the ready salmons.

Brocollis are easy to prepare. Blanch them in boiling water that has been added with a dash of oil and salt. Just 2 minutes is sufficient. Remove immediately, drain off excess water and transfer into same serving plate.

This recipe makes for 2 persons. You may adjust accordingly to your needs.
