Simple Cheesecake Recipe

Go Blueberry Cheesecake

Dish out this quick and easy cheesecake recipe, the Go Blueberry Cheesecake for dinner desserts or for your little upcoming party. These berry cream cheese desserts will be a sure hit with your family and friends. They are so easy to make and only took less than an hour to prepare. I would recommend using a little blueberry yogurt in blueberry dessert recipes to enhance the berry flavour with the cream cheese. It really does make a lot of difference to the flavour of your cheesecake. Just totally hmmmmmmm...

Ingredients
250 g Cream Cheese; softened at room temperature
1/3 cup Fine Sugar
2 tbsp Blueberry Yogurt
1/2 tsp Vanilla Essence
2 Eggs
1 cup Readymade Pie Crust
1 can Blueberry Pie Filling

Method

Beat together cream cheese, fine sugar until smooth and creamy. Add in eggs, one at a time, beating well with each addition. Blend in blueberry yogurt and vanilla essence. Pour blueberry mixture into ready pie crust. Spoon half of the blueberry filling on top of the cheese mixture and create a nice swirl with a toothpick. Bake at 180°C for 30 to 40 minutes or until the center is firm.

Allow to cool before refrigerate. Serve chilled with the remaining blueberry filling.
