Hainanese Chicken Rice

Really, you do not have to make the same chicken dish all the time as I always go for fresh Chinese food recipes with every meal.

There are a variety of different rice preparations to go with your chicken dish for instance the original butter rice, plain white rice, or garlic rice which I prefer.
I make it a point to ensure that the garlic rice is cooked to perfection and smells really great.
You cannot enjoy the dish fully if the rice is not fragrant enough. The rice complements the chicken and this pre-requisite is a must.
The bean sprouts side dish just completes the picture for a perfect home-cooked Hainanese chicken rice meal. Enjoy with all in the family!
Ingredients
2 Chicken Drumstick and Thigh; cleaned
1/2 pot Water
1/2 cube Chicken Stock
2 bowls Taugeh (Bean Sprouts)
2 tsp Soy Sauce
1 tsp Sesame Oil
1 tbsp Chicken Fat
4 cloves Garlic; peeled and coarsely chopped
4 slices Ginger; skinned and cut into slivers
1 bowl Uncooked Rice; cleaned
Method To Prepare Rice
Saute chicken fat together with garlic and ginger until aromatic. Once oil begins to seep out from the fat, add in washed uncooked rice and cover with enough water to cook the rice. Once the rice boils, add in chicken stock and stir lighty until stock has dissolved. Rice is ready when the grains turn white and fluffy. Cover and turn off heat.
Method To Prepare Chicken
Prepare water enough to cover chicken. Once water boils, put in chicken pieces and boil for 10 to 15 minutes. Turn off heat and cover for 5 minutes to allow chicken to cook through. Remove chicken and immerse in cool boiled water. Remove chicken and drizzle immediately with sesame oil and chinese rice wine, if preferred. Serve chicken onto plate.
Method To Prepare Taugeh
Prepare water to boil. Immersed taugeh in boiling water for a minute and remove immediately. This will ensure that taugeh remain crisp and fresh. Drain off excess water and sprinkle with soy sauce and sesame oil. Using a fork, mix the taugeh (bean sprouts) thoroughly with the seasonings.
To serve, scoop one bowl of garlic rice onto serving plate. Place chicken pieces and taugeh next to rice. Voila, the dish is ready!
