Healthy Oat Squares
I created this recipe Healthy Oat Squares upon discovering that I had excess oats in my fridge one weekend. As my husband and I are not exactly keen on cooking oats as a meal, I thought why not use it to make something like oatmeal cookie instead.
I rummaged through and found that I had nuts, raisins and other relevant stuff. The drawback was, I couldn't my beloved square pans so I had to make do with a round casserole dish. Can I possibly turn this into a healthy dessert recipe for diet desserts snack bars, perhaps? Besides, snack bars are a tad pricey for that serving size. My husband welcomed the idea and so I made him write down the ingredients and instructions.
Ingredients
1 1/2 cups Rolled Oats
2 Medium Eggs
2 tbsp Walnuts; coarsely chopped
2 tbsp Black Raisins
1 tbsp Mixed Fruits; chopped
1 tbsp Almond Flakes
5 tbsp Brown Sugar
1/4 tsp Salt
1 tbsp All Purpose Flour
1 tsp Vanilla Essence
1 tsp Cinnamon Powder
1 tbsp Virgin Coconut Oil
Method
In an oven, toast rolled oats at 180°C until fragrant and golden brown. It is preferred to toast oats first for that distinct oaty aroma in any oatmeal cookie recipes.

In a large bowl, add sugar, salt and cinnamon powder to eggs. Use a fork and lightly beat eggs until sugar is dissolved. Add in coconut oil followed by toasted oat flakes, walnuts, raisins, mixed fruits and almond flakes. Mix with a fork. Add in vanilla essence next. Mix again.
Scoop mixture onto greased baking pan or dish and bake for 15 minutes. Allow to cool before cutting into bars (2 1/2 inches x 1 1/2 inches) with an oiled knife.

This recipe makes 6 bars.
