Homemade Butter Cake



Homemade Butter Cakes are relatively simple baking recipes to make and I enjoy making them weekends, alternating with cookies and sponge cakes which are even easier to make. These dessert recipes are best homemade as they do not take the whole afternoon and the results are usually excellent. Definitely great dessert recipes to consider making when you just want something simple!

Butter cakes are also sometimes refered to as cream cakes as they do contain generous amounts of butter or margarine or vegetable shortening thats gives them the creamy, tender bite. This is evident from the flavourful taste and the moist texture of butter cakes as compared to the somewhat dry sponge cakes.


Ingredients

250 g			        	Butter; at room temperature
250 g			        	Self-raising Flour
200 g			        	Castor Sugar
1 3/4 tsp 				Baking Powder	
1/2 tsp				Salt
1/2 tsp				Vanilla Essence
1 tbsp				Condensed Milk
6 			        	Eggs; yolks and whites separated, at room temperature

Method

Cream butter and sugar till light and fluffy. Add salt, then egg yolks one at a time till well-blended. Add essence and milk. Beat till just blended.

Sift self-raising flour with baking powder. Gently fold in the flour till texture of beehive starts to form. Meanwhile, beat the egg whites till stiff but moist. Carefully fold in the egg whites till just blended.

Preheat oven at 180°C. Spoon batter onto greased round baking pan. Bake till butter cake browns.

Leave to cool before cutting.
