Honey Banana Cake



Great dessert recipes for banana desserts, this yummy Honey Banana Cake recipe specially uses the delicious healthful Manuka honey which well complements the sweetness of the bananas. For baking recipes that include bananas, mash them well for a nice spongey cake texture, else your cake will be uneven with unmashed banana bits.

Ingredients

6 tbsp				Butter; softened at room temperature
3/4 cup				Castor Sugar
1/2 cup 				Manuka Honey
3 			        	Medium Eggs; lightly beaten
2 1/2 cups		        	Bananas; overripe and mashed
2 3/4 cups		        	Self-raising Flour; sifted
1 tsp			        	Baking Powder
1/2 tsp 				Salt
1 tsp			        	Vanilla Essence

Method

Cream butter and sugar together until light and fluffy. Add Manuka honey and mix until combined. Add eggs one at a time, blend well and stir in mashed bananas.

Fold in the flour, baking powder, salt and vanilla essence until smooth. Pour batter in greased springform pan. Bake at 180°C for about 50 minutes to 1 hour.

Let cake cool on a wire rack. Cut into two layers and frost with butter icing before serving.
