Honey Ginger Cookies

Cookies are typically quick baking recipes, therefore the most important trick is do not overmix the cookie mixture. You can also chill them first prior to baking to add some crunch and crisp to the cookies.


Ingredients

2/3 cup				Butter
3/4 cup				Fine Granulated Sugar
1/4 cup				Manuka Honey
1			        	Large Egg; lightly beaten
2 cups				Self-Raising Flour; sifted
1 tsp			        	Baking Powder
1 tsp			        	Ground Ginger
1 tsp			        	Cinnamon Powder
1/2 cup				Yellow Raisins; soaked in brandy
1/4 tsp				Salt

Method

Remove raisins from brandy and set aside for later use.

Beat butter together with granulated sugar. Add beaten egg followed by manuka honey and salt. Blend well. Mix in sifted flour and baking powder. Now sprinkle ground ginger and cinnamon powder. Roll in plump-up raisins and mix just well with a large spoon.

Shape mixture into 3/4 inch balls and put onto greased cookie sheet. Allow enough space for cookies to expand. Bake at 180°C for 10 minutes or until cookies turn golden.
