Asian Desserts (Indonesia)

Indonesian Layered Cake





The Indonesian Layered Cake is no doubt an international favourite among baking recipes in general and Asian desserts in particular.

If you do visit Indonesia to places of interest like Bali, Medan, Yogyakarta and other destinatins, do not pass up on the chance to buy yourself a bagful or two of this flavourful Asian sponge cake.

Indonesian Layered Cake On the other hand, if you are not visiting this lovely country anytime soon, you can always make your own Indonesian Layered Cake with our selection of such great dessert recipes. However, do bear in mind that patience is everything when making this layered dessert.


Ingredients
450 g			        	Butter
5			        	Egg Whites
1 tsp		        		Mixed Spice 
220 g			        	Castor Sugar
120 g			        	Plain Flour
17 		        		Egg Yolks
2 tbsp				Rum (optional)
Mixed spice consists of cinnamon bark, cloves, star anise and green cardamon grinded together into powder. This can be bought from any bakery supplies store.

Method

Beat butter till creamy. Meanwhile, sift flour with mixed spice.

Beat egg yolks with 200g sugar till thick and smooth.

Meanwhile, beat separately the egg whites with the remaining 20g sugar till thick.

Fold in alternately, egg yolk mixture and then egg white mixture into the creamed butter, folding in flour a little each time.

Lastly, add in rum.

Grease cake pan with butter. Then line the base with greaseproof paper.

Place a ladleful of cake mixture into the pan. Spread evenly and bake at 170°C for 5 minutes. When it has turn light brown, remove pan from the oven and prick top of cake with a skewer so that no air bubbles form in the cake.

Add another ladleful of mixture. Bake and repeat process as above, till mixture is used up.

When cake is done, remove cake from tin at once and let cool on a wire rack. Cut into ½ inch thick to serve.
