Ingredients450 g Butter
5 Egg Whites
1 tsp Mixed Spice
220 g Castor Sugar
120 g Plain Flour
17 Egg Yolks
2 tbsp Rum (optional)
Mixed spice consists of cinnamon bark, cloves, star anise and green cardamon grinded together into powder. This can be bought from any bakery supplies store.Method
Beat butter till creamy. Meanwhile, sift flour with mixed spice. Beat egg yolks with 200g sugar till thick and smooth. Meanwhile, beat separately the egg whites with the remaining 20g sugar till thick. Fold in alternately, egg yolk mixture and then egg white mixture into the creamed butter, folding in flour a little each time. Lastly, add in rum. Grease cake pan with butter. Then line the base with greaseproof paper. Place a ladleful of cake mixture into the pan. Spread evenly and bake at 170°C for 5 minutes. When it has turn light brown, remove pan from the oven and prick top of cake with a skewer so that no air bubbles form in the cake. Add another ladleful of mixture. Bake and repeat process as above, till mixture is used up. When cake is done, remove cake from tin at once and let cool on a wire rack. Cut into ½ inch thick to serve.
