Jemput Keladi (Crispy Yam Balls)

As the yam is already steamed and cooked, you would not have to worry that the yam is not cooked enough when you fry the balls. The balls will turn golden quite quickly so you will have to slave over the wok or deep fryer until you have finished frying all the yam mixture. Ingredients 1 Large Yam
1 glass Cold Water
4 ladleful Plain Flour
1/2 tsp Salt
Oil for frying
Method
Clean yam thoroughly and peel the skin. Chop yam into small cubes. Steam over rapidly boiling water until yam cubes are soft. You can test with a fork. The yam should be soft enough to be mashed. Remove from heat. While still hot, press with fork to mash the yam. Add cold water into yam and mix well. Mix in plain flour and salt and keep mixing with a large spoon. Heat oil in wok. When oil is ready for deep frying, shape yam mixture into small balls and drop gently into hot oil. Fry until yam balls turn golden. Scoop up and place on tissue towel to drain the oil. Best to serve while hot.
