Key Lime Pies



Key Lime Pies as featured in our collection of 4th of July recipes is an all-time favourite patriotic desserts that you must not miss if you are hosting a family and friends gathering on that special day.

As with most pie recipes, the pie crust must be prepared first. If you are running short on time, you can buy ready-made pie crust or make a quick one using graham crackers or other cookie crumbs.

So, delight your guests with this refreshing Key Lime Pies that is featured in our Fourth of July dessert recipes.


Ingredients

1 1/4 cups		        	Ginger Biscuit; crushed into crumbs
1/3 cup				Melted Butter
5 			        	Medium Egg Yolks
1/2 cup				Fresh Lime Juice
1/3 cup				Sugar
1/4 tsp				Salt
2 tbsp				Grated Lime Peel
2 1/2 cups		        	Low Fat Cream

Method

Preheat oven to 190°C.

Combine ginger biscuits crumbs and melted butter. Press firmly mixture on to bottom and side of pie dish. Bake for about 10 minutes until the crust has turned brown. Allow to cool.

Using double boiler over simmering water, whisk egg yolks together with sugar, lime juice and salt until mixture is well-blended. using wire whisk, beat egg yolks, lime juice, sugar and salt until well blended. Continue to stir until mixture is thick enough to coat back of a spoon.

Turn off heat. Stir in grated lime peel. Chill in fridge about an hour.

Meanwhile, beat cream at medium speed until soft peaks form. Leave 1 cup aside for garnish. Fold remaining cream into lime mixture. Gently spoon lime filling into prepared ginger pie crust and chill for at least 3 hours until filling has set.

To decorate, spread whipped cream over top of pie and arrange with lime slices, if you like.
