Lemon Bars



Lemon Bars featured in our collection of great dessert recipes are simple quick easy dessert recipes that you can easily follow.

If you like cookie bars, you can start baking your own homemade bars with these baking recipes. Add in lemon peel to enhance the flavour.


Ingredients

1/2 cup				Icing Sugar
1 3/4 cups		        	Plain Flour
3/4 cup				Butter
4 			         	Medium Eggs
1 cup			        	Castor Sugar
1/2 tsp				Salt
1/2 cup				Lemon Juice

Method

Sift plain flour with icing sugar. Using a pastry cutter, cut butter into the flour mixture. Press this mixture firmly onto base of greased square baking pan. Bake this first layer at 180ºC for 20 minutes or until layer turns golden.

Cream eggs at high speed until it turns light and pale. Add castor sugar gradually, then salt, finally lemon juice. Beat well. Pour this mixture onto the first baked layer and bake at 180ºC for about 20 minutes or until turn golden. Dust with icing powder. Allow to cool before cutting into bars.

Always preheat oven
- or cookies will not bake well
- cooking time will be wrong

Use shiny cookie sheets
- for even browning

Rotate sheet during baking
- for even baking

Leave space between cookies
- cookies'll expand during baking
