Chinese Dessert Recipes

Lin Chee Kang



Lin Chee Kang, loosely translated as lotus seeds drink, in our selection of great Chinese dessert recipes is a popular Chinese Asian dessert and is known to be a cooling Chinese traditional drink generously filled with lotus seeds, colourful sliced jellies, pearl sagos and longans. The sweet and richly flavoured longans add a different twist to the taste of the drink and chewing into them is a truly satisfying experience.

In Malaysia, you will find these Chinese desserts drinks sold anywhere between RM2.00 to RM3.00 in night markets or Chinese restaurants and are best enjoyed cold with ice. However, this lotus seeds dessert drink can also be served hot as preferred by some Chinese including my husband. Alternatively there are pre-packed Lin Chee Kang ingredients where you will only need to add rock sugar in your preparation should you need to make a quick drink.


Ingredients

100 g 				Barley 
100 g 				Sago Pearls
100 g 				Lotus Seeds
80 g			        	Ginkgo nuts
1/2 			        	Dried Persimmon; thinly sliced
60 g			        	Dried Nutmeg; thinly sliced
1 1/2 cups		        	Dried Longans	
1 packet 				Red Jelly Powder
1 packet 				Green Jelly Powder
600 g 				Rock Sugar
6			        	Pandan (Screwpine) Leaves; knotted

Method

Boil barley grains, sago pearls and ginkgo nuts separately. Remove the bitter core of the lotus seeds and boil until lotus seeds are cooked. Drain all grains well and store them separately.

Prepare jelly as per instructions on the packet. Once the red and green jellies have set, slice into slivers and store separately.

Boil rock sugar in 1 pot of water together with pandan leaves. When sugar has well dissolved, add in dried longans. Continue to boil until longan flesh become soft and tender.

You can serve these Chinese desserts hot or cold (with crushed ice).
