Low Fat Amaretto Cheesecake

This is definitely one of only a few Amaretto cheesecake recipes that is fuss free and uses egg beaters and fat free cheese. Egg beaters are used in place of eggs and therefore have no yolks, is cholesterol-free and also an excellent low-calorie source of protein.


Ingredients
6 		                	Egg Beaters
1/2 cup 		        	Raw Sugar
1 tsp 		                        Vanilla Essence
1 tsp 		                        Almond Essence
2 tbsp 		        	Amaretto Liqueur
900 g 	                	Fat-Free Ricotta; softened at room temperature
6 tbsp 		        	All-purpose Flour
1 tsp 	         	        	Baking Powder
1 tsp			        	Ground Cinnamon

Method

Beat together egg substitute, raw sugar, vanilla essence, almond essence & amaretto until frothy. Add ricotta cheese and beat until smooth and creamy.

Combine both flour and baking powder. Add flour mixture gradually to cheese mixture and blend well with each flour addition. Pour batter into a 9" springform pan. Bake at 180°C for an hour or until toothpick inserted into center of cake comes out clean.

Allow to cool and chill in refrigerator. Sprinkle lightly with ground cinnamon before serving.
